If you are fond of eating pakodas, then make pakodas, the taste will be amazing.

The leaves and all the spices are first steamed and then a crispy hot vegetable is prepared. This is an ideal evening snack that can be served with ginger tea and can also be an ideal breakfast recipe.

Contents of Kothimbir Valley

2 cups coriander leaves
1/2 tsp ginger paste
2 teaspoon sesame seeds
1 teaspoon ground turmeric
1/2 tsp cumin powder
3 medium chopped green chillies
1 teaspoon sugar
1 cup virgin olive oil
1 cup gram flour
1/2 tsp garlic paste
1 teaspoon red chili powder
1/2 tsp coriander powder
1/2 tsp garam masala powder
salt as required
2 pinches baking soda

How to make Kothimbir Vadi (Coriander Leaf Pakora)

Wash and filter 1 green coriander
Wash green coriander thoroughly and remove excess water. Spread them out on absorbent paper napkins and pat them dry to remove any moisture.

Finely chop 2 leaves
Keep aside to dry. Chop coriander leaves finely.

3 Mix all the ingredients

  • Add all the ingredients except oil and coriander leaves and mix. Add salt and spices.

4 Prepare the dough
mix well. As you mix the dough it will start to get wet and this will help bind it together.

5 Give it a shape
Shape the dough into a cylinder or spread it in a greased dhokla plate.

6 Steam it
Cook the dough in a steamer or pressure cook without whistling for 20 minutes or until it becomes firm.

7 Cut them into desired shapes
Cool the dough and cut it into round or square shapes with a knife. Keep the slices thin so that they fry evenly and thoroughly.

8 deep fried 8 slices
Heat oil in a non stick pan. Fry on medium-low flame until golden brown on both sides.
