Paneer Biryani Recipe
To make Paneer Biryani full of taste, first wash the rice and then boil it. Meanwhile, cut the paneer into pieces. After boiling the rice, add desi ghee to the pan and heat it. When the ghee is hot, add paneer pieces and fry till it becomes golden. After this, take out the fried paneer in a bowl. Now add cardamom, cinnamon, black pepper powder, cloves and green cardamom to the remaining ghee and fry for some time.
After roasting the spices for about 30 seconds, add finely chopped onions, garlic, ginger and green chillies. When the onion becomes soft while frying, add turmeric, tandoori masala and cardamom powder and fry it. After frying for some time, add tomato puree to the pan and mix. After roasting for 5 minutes, add cashew paste and salt as per taste to the mixture.
When the mixture cooks well and starts releasing ghee, add fried paneer pieces to it, mix well and cook for 10 minutes. After this turn off the gas. Now take a vessel and put it on the gas on low flame. Now put one third of the previously cooked rice in the vessel and make it again. Spread half of the prepared paneer mixture over it and make another layer. Then make another portion of rice over it. Then make a second layer of paneer mixture on top of the rice. Finally put the rice back on top.
Now spread waxy fried onions, coriander leaves and mint leaves over the rice. After this, cover the vessel and let the biryani cook for at least 12-15 minutes on low flame, then turn off the gas. Paneer Biryani is ready with great taste. Serve it hot only.
