Material Milk – 2 liters Sugar – 4 tbsp Almonds – 15 Pistachios – 10 Green cardamom powder – 1 tsp Saffron – 1/2 tsp Method – First of all, pour milk in a pan and keep it to heat on medium flame. – When the milk starts boiling, reduce the flame of the gas and let the milk cook. – Keep stirring the milk continuously with the help of a ladle so that it does not stick to the pan and burn. Let the milk cook till it thickens. During this time, when the milk becomes one-third hot, add sugar to it and mix it well. When sugar and milk are mixed well, add chopped almonds, pistachios and saffron leaves and mix with the help of a ladle. After this, finally add cardamom powder and mix it in milk. During this, let the milk boil on low flame only. – When there are lumps of cream in the milk, then turn off the gas. – Rabdi is ready. Keep it in the fridge for some time before serving. Garnish it with almonds, pistachios and saffron while serving.
