A new twist to Khichdi, make ‘Vegetable Khichdi’, know the method of making it.

Mostly, Khichdi is made up of pulses and rice. But if you make this khichdi by adding vegetables, then this khichdi becomes very tasty and it also becomes more nutritious than before. It is also very easy to make. Tasty and healthy too. So why don’t we make Vegetable Khichdi today.

necessary ingredients –

Rice – one bowl
Moong dal – half bowl
Potato – 2 (cut into small pieces)
Capsicum – 1 (cut into small pieces)
Peas – half bowl (peeled)
Green chilli – 2 (finely chopped)
Ginger – 1 inch long piece (grated)
Desi Ghee – 1 or 2 (tablespoon, as per your wish)
Asafoetida – 1-2
Pinchjeera – half teaspoon
Black pepper – 4-6 (coarsely crushed)
Cloves – 4 (coarsely crushed)
Turmeric – 1/6 tsp
Salt – as per taste
Coriander – 1 tablespoon (chopped)

Method –

Clean the rice and pulses, wash them thoroughly and soak them in water for 1 hour. All the vegetables have been washed and chopped.

Put ghee in the cooker and heat it. Now add asafoetida and cumin seeds in hot ghee. After cumin turns brown, add black pepper, cloves, turmeric powder, green chilli, ginger. Stir with a spoon 3-4 times, now add all the vegetables in this masala. Fry the vegetables for 2-3 minutes while stirring with a spoon.

Now add dal and rice. Fry for 2-3 minutes while stirring with a spoon.

Add five times water with same bowl you used to measure pulse and rice. (If pulses and rice are 1 1/2 bowl, then add 7 1/2 bowl of water) Also add salt as per taste. Switch off the cooker. As soon as a whistle comes, immediately turn off the gas. Raise the whistle of the cooker with the help of a spoon and release half the pressure of the cooker. After 4-5 minutes, when the pressure in the cooker is released, open the cooker. Your Vegetable Khichdi is ready.
