necessary ingredients
- 500 grams small brinjals
- 1/2 tsp cumin
- 1/2 tsp fenugreek seeds
- 10-12 curry leaves
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
Ingredients for Gravy - 1 tsp cumin
- 2 tsp whole coriander
- 1 tsp sesame seeds
- 1/4 cup- Peanuts and onion (roast both together and grind them to make powder)
- 1 tablespoon tamarind pulp
- Green chilli as per taste
- Oil
- Salt as per taste
Method of preparation - Cut the brinjal, leave its stem intact and soak it in salt water.
- Heat oil in a pan, add cumin seeds, fenugreek seeds, sesame seeds, curry leaves, turmeric powder and red chilli powder.
- After squeezing out the water from the brinjal, add it to the spices and cook for 10 minutes.
Now heat the remaining oil and add the ground spices and cook for 3 minutes.
After this, add tamarind pulp, green chillies and fresh green coriander and leave it on low flame.
After this, put brinjal in gravy and cook on low flame for 10 minutes.
Now Hyderabadi brinjal is ready. Serve it with hot rice.
