how to make kachori
- First of all soak the moong for 3 hours.
Now you can grind the beans in a grinder, but take care not to grind them too finely. - Take flour in a vessel and add salt, semolina and ghee to it and knead a stiff dough.
Now heat oil in a pan and add cumin, fennel, coriander, asafoetida, coriander powder, turmeric, red chilli powder and gram flour and mix well. - Keeping the flame very low, add coarsely ground lentils and cook for at least 5-10 minutes.
- After this add salt to the spices and mix well. Take it out in a plate. – Add Kasoori Methi in it and mix once again.
- Now knead the dough once again and make balls from it.
Roll them out until they are filled. While rolling, take care not to apply too much force, otherwise the dough may tear and the jaggery may come out. - Heat oil for frying in a pan and then add this Kachori in it and cook on medium flame till it turns golden from both the sides.
- Your crispy kachori is ready. Serve it with potato curry and green and red chutney.
