about chhena
It is said that Chhena is not purely a product of India. This is the gift of Portuguese traders, who came to India to trade spices and other things. Gradually this Chhena became popular among Indian people and has become a part of Indian sweets. Today, sweets made from Chhena have become popular in many other states including West Bengal.
Tips to make perfect Chhena
While making Chhena, use vinegar or lemon juice to curdle the milk.
If you do not wash the chhena with clean water after curdling the milk with vinegar or lemon juice, then sourness remains in it. Therefore, wash the chhena thoroughly with cold water 3-4 times.
To make chhena, take special care of the ratio of vinegar (use vinegar) and water, so that the milk curdles properly and the chhena is prepared properly. Milk curdles properly only when the ratio of vinegar and water is 1:3.
To make chhena, do not heat the milk too much, heat the milk only up to about 80 degrees Celsius, adding vinegar to too hot milk does not make chhena properly.
After adding vinegar, keep stirring the milk with a spoon, so that the chhena becomes soft. While making Paneer (Paneer Recipes), one should not overfeed the milk.
After curdling the milk, place a cotton cloth (cotton cloth maintenance) over the strainer and pour the curdled milk into the cloth, then wash with cold water. After washing the chhena, tie the cloth and hang it.
After some time, when the water evaporates, open the cloth and your soft chenna is ready. Make whatever sweets you want with this and enjoy the taste.
