Material:

Gram flour – 200 grams (2 cups)
Turmeric – 1/6 tsp (if you wish)
Salt – as per taste (less than 1 teaspoon)
Green chilli paste – 1 tsp (if you wish)
Ginger paste – 1 tsp
Lemon juice – 1 tablespoon (2 lemons)
Eno salt – a little less than 3/4 teaspoon
Oil – 1 tablespoon
Mustard – half teaspoon
Green chillies – 2 – 3 (cut into 2 pieces lengthwise)
Salt – 1/4 tsp (as per taste)
Sugar – 1 tsp
Lemon juice – 1 tsp (if you wish)
Green Coriander – 1 tablespoon (finely chopped)

Method:

Sieve the gram flour in a vessel and then make a paste by adding water slowly into it. Make sure that there are no lumps in it, also add turmeric to it, mix it and keep this solution covered for 20 minutes so that it swells and sets.

Put 2 small glasses of water in the vessel in which you want to make Dhokla and keep it for heating and also place a stand in it on which you will keep the Dhokla thali. Grease the plate in which the mixture is to be poured by applying oil. Now add lemon juice, chilli paste, ginger paste and salt to the Dhokla mixture and mix well. Add Eno fruit salt to it and mix and as soon as the mixture starts rising, immediately put it in an oiled plate and put it in a vessel with heating water. Keep it on the stand.

Now cover the vessel with water on top. Dhokla will be ready in about 20 minutes on medium flame. To check whether the Dhokla is ready or not, insert a knife into it. If the batter does not stick to the knife then the Dhokla is ready. Take it out from the vessel containing water.

When the plate cools down, move a knife around the dhokla, separate it from the plate and take it out in another plate. Now cut it into pieces of your choice.

Heat oil in a pan, add mustard seeds and temper them, then add green chillies and fry them for a while. Now add half a cup (100 grams) of water, add sugar and salt and turn off the gas once it starts boiling. Mix lemon juice in it and pour it all over the dhokla. Garnish the hot dhokla with green coriander or grated coconut and serve.

Tartaric acid is used in Dhokla available in the market. If you want, you can also use it, to make this much dhokla, take 2 chickpea pieces, mix them in water, add it to the dhokla mixture and make it according to the method mentioned above.
