Make cucumber raita in Pahari style, there will be no need of vegetables with roti.

Raita is good for the stomach. It increases your appetite and also makes digestion smooth after eating. Salty and sweet raita is prepared by mixing various vegetables and fruits with curd. Apart from Bundi raita, cucumber raita is the most eaten one. It is usually eaten as a side dish.
Its combination with pulao, dal and vegetables is very much liked. Today we are also telling you how to make cucumber raita. No, this is not the recipe you usually make. This is a Pahari recipe, which is made very spicy. After eating this mountain cucumber raita, you will not feel the need of vegetables or pulses again.
The spices found in Garhwali and Kumauni regions of Uttarakhand are quite tasty. Mountain food is very simple, but despite that there is no lack of taste in it. To make this raita, along with cucumber and curd, you will also need some other things. Let us know how this special raita made in Uttarakhand is prepared.
How to make mountain cucumber raita
First of all, peel and wash 2 cloves of garlic and 1/2 inch ginger. After this, dry roast 1/2 teaspoon cumin in a pan. When cumin seeds are roasted, grind them and make powder (Tips for buying and storing cumin seeds).
Wash a handful of green coriander and 4-5 mint leaves and roughly chop them. Apart from this, roughly chop 2 green chillies and keep them aside. Now mix salt as per taste, 1/8 tsp turmeric powder, 1/4 tsp red chilli powder in a small bowl.
Peel and grate 1 cucumber and keep aside. If you like cucumber with peel, you can grate it as is.
Now put garlic, ginger, roasted cumin, green coriander, mint leaves, green chillies and the spices kept in the bowl in a mortar and pound them well. Keep in mind that it will become a coarse paste.
After this, add curd and grated kheer in a bowl and mix. Add this crushed masala to it and mix it well. Your spicy Pahari Raita is ready. Serve it with food (Pahari Namak Recipe).
Mountain Cucumber Raita
Let us tell you today how to make spicy mountain cucumber raita.
Material
1 cucumber
250 grams curd
2 cloves garlic
1/2 inch ginger
1/2 tsp cumin
a handful of coriander
4-5 mint leaves
2 green chillies
salt as per taste
1/8 tsp turmeric powder
1/4 tsp red chili powder
Method
First of all heat the pan and add cumin seeds and fry them. Grind this roasted cumin and make powder.
After this, add ginger, garlic, cumin, green coriander, mint, green chilli, salt, turmeric powder and red chilli powder in a mortar and pound well.
Put curd in a bowl and add grated cucumber to it and mix. After this, add prepared masala and mix well.
Your mountain cucumber raita is ready. Serve it immediately with food.
