How to make Rabdi for Malpua
Cook the milk in a large pan on medium heat till it thickens.
When the milk thickens, add sugar, cardamom powder, cashews, raisins, almonds and pistachios.
Rabdi is ready, cool it and then serve it with cold malpua.

Allow the milk to cool and then make a batter by adding dry milk powder, refined flour and semolina flour (semolina flour halwa recipe). The batter should be slightly thicker than cake batter.
Heat oil or ghee in a pan, and make malpua by adding batter to it.
Fry the Malpua till it turns golden brown from both the sides. After frying, soak it in sugar syrup, add some rabdi on top.

How to make traditional gatte ki sabzi for rakhi
To make gatte ki sabzi, combine the gram flour, red chili powder, coriander powder, carom seeds, and salt in a large bowl and mix well. Now add water slowly and make a thick dough.
Boil water in a large pan. Make round balls in the size of dough and put them in boiling water. After boiling them in the pot, keep them for 10-15 minutes.
Allow the gatte to cool completely and then cut into small pieces.
Now heat oil in a pan and fry the gatte pieces till they turn golden brown. Then take them out and keep them aside.
Now to make gravy, heat oil in a pan. Add chopped onions to it and fry till golden.
Now add ginger-garlic paste and fry it well.
Now add tomato puree and add all the spices like – coriander powder, turmeric powder, red chili powder and garam masala.
Cook the gravy on medium heat till the oil separates and the spices are cooked well.
Now add hot water to it and mix the gravy well.
Add salt to the gravy and then add the fried gatte. Mixing everything well, cook the Gatton curry for 2-3 minutes.
Your gatte ki sabzi is ready. Garnish with coriander leaves and serve hot with roti, naan or rice.
