Ingredients of Tomato Rice
Boiled Rice – 2 cups
Finely chopped tomatoes – 2
Finely chopped onion – 1
Ginger paste – 1/2 tsp
Chana dal – 1/2 tsp
Urad Dal – 1/2 tsp
Green chili – 1
Rai – 1 tsp
Cumin – 1 tsp
Fenugreek seeds – 1/4 tsp
Cinnamon – 1 inch piece
Carnations – 3-4
Turmeric – 1/4 tsp
Red Kashmiri chili powder – 1/2 tsp
Coriander powder – 1/2 tsp
Chopped cashews – 1 tbsp
Curry leaves – 1 tbsp
Chopped mint leaves – 2 tbsp
Chopped coriander – 2 tbsp
Oil – 1-2 tbsp
salt to taste
Tomato Rice Recipe
To make tasty tomato rice, first cut mint leaves, green coriander leaves into fine pieces. After this, cut the cashews into pieces as well. Now put 2 tbsp oil in a pan and heat it. After the oil is hot, add mustard seeds, cumin seeds, chana dal, urad dal and fry them. After a few seconds, add fenugreek seeds and curry leaves to the pan and fry. – After this, put the cashew pieces in the pan and fry them till they become golden brown. – Now finely chop the onion and put it in the pan and fry it on medium flame till it becomes light brown. After this, add green chili and ginger paste to the pan and fry while stirring with a spoon. After this, put thin pieces of tomato in the pan and cook till it becomes tender. When the tomatoes become soft, add turmeric, red chili powder, coriander powder, mint leaves and salt to taste and cook while blending. – When all the ingredients are cooked well in the pan, add cooked rice and cook while stirring with a spoon. Now cover the pan and cook the covered rice for 5 minutes. Keep stirring the rice with a spoon in between. After this turn off the gas. Tasty Tomato Rice is ready. It can be served with chutney or cream cheese.
